Chocolate dipped strawberries

Loaded veggie omlette

Eggs are rich in protein and it is advised by pediatricians for small kid starting at the age of one to feed one egg per day. This provides complete nutrients required for brain health and overall health of the toddlers. While there are plenty of options to cook egg, here is one omlette recipe that is loaded with lots of vegetables and little bit of cheese to make it as a favourite dish for kids. Here is a pic of my today's breakfast, the loaded veggie omelette with blueberry milkshake and some fruits like green apple and peach :)


Ingredients :

4-5 button mushrooms 🍄 
1/2 cup broccoli florets 
1/4 cup yellow bell peppers 🌶, you can use any color
1/4 cup of spinach 
Salt to taste
1 tsp black pepper powder
2 tbsp shredded cheddar cheese, or any cheese of your choice
3 eggs 🍳 
1tbsp butter or oil

How to make loaded veggie omelette 

1. Wash and cut the mushrooms into 4 pieces.

2. Heat a pan and add a little butter. The add chopped mushrooms and broccoli florets.


3. Sauté till the mushrooms turn color and shrink from its original size.
Then keep it aside.


4. Now add finely chopped bell peppers and spinach 🍃 leaves and sauté for 2-3 minutes.
We sauté the spinach and bell peppers separately as spinach leaves get cooked faster than broccoli and mushrooms. Also we want the bell peppers to be little crunchy and hence sautéing it for only 2-3 minutes.



Tip: Any other vegetables can be used like onions, tomatoes 🍅, green chillies, jalapeños, olives etc. 



5. In a bowl, whisk together 3 eggs, salt and pepper and set aside.



Tip: You can use a fork if not an egg beater.


6. In the heated pan on low flame. Add remaining butter/oil.



7. Pour in the beaten egg and make it as a big round.



8. Let it cook for a minute or until the top layer starts to change its color, indicating it needs to be little sticky so that the veggies sit on the omlette perfectly.


9. Now add the sautéed vegetables 🥒, mushrooms 🍄, broccoli, bell peppers, spinach on one half of the omelette.



10. Sprinkle some generous amount of shredded cheese 🧀 on top of the veggies. Let it cook for a minute with a closed lid.


11. Then flip the other half of the omelette to cover the vegetables.



12. Remove the loaded veggie omelette from  the flame.



13. Healthy vegetable omelette is ready.



14. Serve it with some fruits 🍉 as morning breakfast. Kids would love to have it as it is different from the regular omelette and also has spinach in it. This is a nice way of eating spinach as you don't feel the spinach in the omelette as it shrinks a lot while sautéing.

Chocolate dipped strawberries

I once tried to make chocolate flavoured cake. You know what i mean ? Well it's not a chocolate cake, but i wanted to add little bit of melted chocolate to the batter and I used a microwave safe bowl to melt the chocolate. Uff! the chocolate did not melt evenly instead, the bowl started to burn. Never in my world, i know that the microwave needs to be set in the lowest power mode and the chocolate needs to be melted by keeping it in the microwave and check every 30 seconds. Over the period of daily cooking and learning, i thought double boiler method would be the best way to melt chocolates and of course without burning anything! Mango Sabudana Pudding | Mango Sago Pudding

It's almost the end of mango season and here I have got a chance to get the few mangoes and made a pudding using sabudana and it turned out delicious, yet healthy too!  Here I'm to share the simple recipe. Ingredients: 1 cup of boiled milk 2 cups of water a pinch of salt 3/4 cup of sabudana 1 ripe mango 1 tbsp tutti fruity/dry fruits Rose syrup (optional) for topping1  How to make mango sago/sabudana pudding: Boil 2 cups of water. Add a pinch of salt and then sabudana/sago.  Switch off the flame. Cover it and let it rest for about 2 hours or until sago has cooked completely. Transfer a glass of milk to a mixer or blender. Add chopped mangoes. Blend till smooth. After two hours, sago has absorbed enough water and cooked well. Drain water completely. Transfer it to a tall serving glass. How to make Sukku Kaapi Powder

Sukku Coffee powder is one of the healthy beverages we have in Southern parts of India. It is a natural remedy for cold, cough, indigestion problems and many more. In this version of sukku kaapi/coffee powder i have added more of coriander seeds to suit my taste. But in actual recipe it's used in less amounts than that is mentioned in this blog. Let's quickly see the ingredients for sukku kaapi powder 50 gms of dry ginger aka sukku (in Tamil) 1 tsp of black pepper corns 1 tsp of cumin seeds 3 tbsp of coriander seeds How to make sukku kappi powder : Dry roast all the ingredients on medium flame until it turns aromatic. Let it cool down to room temperature. Firstly, take dry ginger and pulse it to coarse powder. Then all the remaining ingredients and grind it to a almost smooth powder.
