Chocolate Peda

Kids love chocolate and when you mix milk contents with chocolate it is one of those best combinations that kids would crave for, anytime. Chocolate peda is an indian sweet made out of homemade khoya or mawa mixed with cocoa powder to get that chocolaty flavour. Ofcourse, some sugar goes into the recipe to give little bit more of sweetness though you use sweetened cocoa powder. Because, the sweetness would not suffice from the cocoa powder itself.





You can optionally top the chocolate pedas with any nuts like pistachios, cashews, almonds or walnuts. I used chopped pistachios for decorating the chocolate pedas as the green color of pistachios contrasts the brown color of the chocolate pedas. Ingredients:

1 cup of khoya
2 tsp of sweetened cocoa powder
1/4 cup of sugar
1/2 cup condensed milk
2 tbsp whole milk
2 tbsp sugar
few saffron strands
1/2 tsp cardamom powder
2 tsp ghee/clarified butter





How to make chocolate peda:

1. Take a bowl with 2 tbsp of whole milk and add saffron strands. Mix it once. Let it stand for 10 minutes.



2. Heat a non-stick pan, add condensed milk, homemade khoya, sugar, saffron milk, cardamom powder and a tsp of ghee.



 

 

3. Mix the contents of pan and stir continously on medium flame.





4. In about 4-5 minutes, the contents would form a thick mass and it all comes together.





5. Once you see a smooth mass of khoya, condensed milk and other ingredients, switch off the flame.



6. The khoya mixture tends to thicken as it cools down.



7. To that khoya mixture add sweetened cocoa powder.





8. Knead it to a smooth dough.



9. Make small round balls out of it.



10. Grease your palm with some ghee/clarified butter. Flatten each of the ball with you palm.



11. Using your thump make a small dent at the centre.





12. Add some chopped nuts like pistachios, almonds, walnuts or cashews to the centre of the chocolate peda.



13. Woaa! Chocolate pedas are ready :) I have used the least amount of ghee while making the pedas and hence you would not see a smooth texture of the pedas.



If you are ok with adding more ghee, then the pedas would definitely shine more and be smooth in texture.



14. Keep them refrigerated and finish it off within 2-3 days. As it is made out of milk, it does not stay good beyond 3 days.

Chocolate dipped strawberries

I once tried to make chocolate flavoured cake. You know what i mean ? Well it's not a chocolate cake, but i wanted to add little bit of melted chocolate to the batter and I used a microwave safe bowl to melt the chocolate. Uff! the chocolate did not melt evenly instead, the bowl started to burn. Never in my world, i know that the microwave needs to be set in the lowest power mode and the chocolate needs to be melted by keeping it in the microwave and check every 30 seconds. Over the period of daily cooking and learning, i thought double boiler method would be the best way to melt chocolates and of course without burning anything! Mango Sabudana Pudding | Mango Sago Pudding

It's almost the end of mango season and here I have got a chance to get the few mangoes and made a pudding using sabudana and it turned out delicious, yet healthy too!  Here I'm to share the simple recipe. Ingredients: 1 cup of boiled milk 2 cups of water a pinch of salt 3/4 cup of sabudana 1 ripe mango 1 tbsp tutti fruity/dry fruits Rose syrup (optional) for topping1  How to make mango sago/sabudana pudding: Boil 2 cups of water. Add a pinch of salt and then sabudana/sago.  Switch off the flame. Cover it and let it rest for about 2 hours or until sago has cooked completely. Transfer a glass of milk to a mixer or blender. Add chopped mangoes. Blend till smooth. After two hours, sago has absorbed enough water and cooked well. Drain water completely. Transfer it to a tall serving glass. How to make Sukku Kaapi Powder

Sukku Coffee powder is one of the healthy beverages we have in Southern parts of India. It is a natural remedy for cold, cough, indigestion problems and many more. In this version of sukku kaapi/coffee powder i have added more of coriander seeds to suit my taste. But in actual recipe it's used in less amounts than that is mentioned in this blog. Let's quickly see the ingredients for sukku kaapi powder 50 gms of dry ginger aka sukku (in Tamil) 1 tsp of black pepper corns 1 tsp of cumin seeds 3 tbsp of coriander seeds How to make sukku kappi powder : Dry roast all the ingredients on medium flame until it turns aromatic. Let it cool down to room temperature. Firstly, take dry ginger and pulse it to coarse powder. Then all the remaining ingredients and grind it to a almost smooth powder.
