Flesh part from one mutton head
2 large onions, finely chopped
2 green chillies, finely chopped
1 red chilli, broken
2 + 2 tsp ginger garlic paste
2 tsp cooking oil
1 tbsp chopped coriander leaves
1/2 tsp + 1/2 tsp turmeric powder
1 tsp red chilli powder
3/4 tsp garam masala powder
salt to taste
2 cups of water.

Clean and wash the fleshy parts of mutton head. Transfer it to a pressure cooker. Add 2 cups of water along with turmeric powder, ginger garlic paste. Pressure cook for about 7-8 whistles or till the meat is cooked thoroughly.

Heat oil in a kadai or pan. Once it gets hot, add cooked mutton pieces.
Add chopped onions, green chillies.
Add broken dry red chilli. Add 2 tsp of chopped ginger garlic. Saute till raw smell goes away.
Add garam masala, turmeric powder, red chilli powder and salt.
Add 1/4 to 1/3 cup of mutton stock.
Cover and cook for few minutes. Add pepper powder as per taste and stir in for few seconds. Check for salt and adjust accordingly.
Finally garnish with chopped coriander leaves and switch off the flame.
Voila! Simple and yummy thalakari fry ready.
