Egg in the basket

Egg in a hole or egg in the basket is nothing but fried egg cooked in the hole of a bread slice. I have to admit that this is my second attempt of making egg in a hole as my first try did not come out the way it should.  If you are from Chennai you would obviously hear this term "half boil" - and if you are a fan of half boil, then you would love this recipe for sure. Egg in the basket is a wholesome breakfast when served with a bowl of mixed fruits and a coffee - wow! This is my dream breakfast or brunch you would call it on a lazy sunday morning. All you need is a slice of bread or a waffle and one egg. You can season with salt, pepper and grated cheese which is totally optional. If serving for kids, do flip and cook. Fusilli in Marinara Sauce

Italian dishes are one of my favorite next to Indian cuisine. With that being said, i cook pasta once in a week for breakfast or dinner. I happily indulge myself in this food variety while my other family members are like what are you even eating while we have our Idly or dosa or chapati . If i dont have pasta in my pantry ( i always use durum wheat pasta, needless to say) then i feel i'm missing some major ingredient in my kitchen as if we dont have rice or wheat flour. Moringa Leaves Chapati

Greens help our body to improve heamoglobin levels when consumed regularly. They are rich in iron and is part of every lunch meal in most of our neighbourhood. Moringa leaves is exceptionally good as compared to other varieties of greens or spinach available in the market. The juice extracted from the moringa leaves boosts our body immunity and protects us from various illness like cold and joint pain. This is by far from my personal experience. I try to include moringa leaves in my meal twice in a week either by adding them in sambar or making ragi adai or chapati. Today's blog post is on the process of making chapati with moringa leaves. Ragi/Finger Millet Pancakes

Finger millet is the most common multigrain used in my kitchen atleast twice a week in the form of adai or kanji or pancakes. It has various health benefits and helps reduce blood sugar level too. I have a pack of store bought ragi flour, you can also use homemade sprouted ragi flour to get more nutrition out of it. All you need for this recipe is a handful of grated coconut, brown sugar or white sugar or Jaggery with ragi flour. Maple syrup or sugar syrup or honey could be used with these pancakes. This is one of the best and healthiest pancake recipe i have ever made and  of course i like it too!
