Roasted Veggies

Vegetables roasted in oven are crispy and consume negligible amount oil say 1 or 2 tsp as compared to the amount of oil used for deep frying. There is no compromise in the taste of the oven roasted veggies and in fact it is a healthier version of the deep fried fritters. The spice level could be adjusted per your taste buds. The choice of veggies generally are potatoes, cauliflower, broccoli, carrot that are easily available in our kitchen pantry at any given time, i totally agree that broccoli is not readily available in indian markets. However, you can stock up the vegetable whenever it is seen in the market place. Brownie

Brownies are kids favorite and of course my favorite too. The cocoa powder plus the eggs and the chocolate chips make it to taste amazing and melt in mouth dessert. The recipe does not call for any blender or even whisk. You can just mix the wet and dry ingredients with a fork or a spatula. The result is wonderful. The brownie recipe i'm going to share here is tried and tested in my kitchen. It has become one of my favorites too! Eggless Vanilla cup cake

Eggless Vanilla Cup cakes: Vanilla flavour is the default one of all the cake flavours like chocolate, banana walnut, black forest, white forest, lemon, carrot, blueberry, pineapple etc. Today we are gonna see about the basic vanilla cup cakes without using eggs but still the results are awesome as you could see the cakes here. Cup cakes are special to me since it is easy to serve and fuss searching for a plate or spoon. I use the cup cake liners so that the baking process is clean and it does not call for much of cleaning process. You can use the simple cream cheese, butter and sugar frosting, while i choose to use the white chocolate chips to top to add some more beauty to the spongy vanilla cup cakes.
