Egg Drop Mushroom Soup

Mushrooms have way too many health benefits that one cannot deny it. I do love mushrooms as a kid and still is one of my favorites when considering any continental dishes or simple stir fry veggies with broccoli or purple cabbage. These are all lovely combos you should try for a stir fry. In today's episode of my home cooking, you would see how to make a mushroom egg drop soup using chicken stock and optionally some chicken pieces. If you are a vegan, then opt for vegetable stock and add some extra veggies to add that twist to the soup(obviously skip chicken). Egg Burji

A quick and easy protein rich side dish is egg burji or egg podimas as we call it in Tamil.  It goes well with sambar rice, rasam rice and any tangy gravy too. Let's see the ingredients list. You might also be interested in check other egg recipes from my blog: Egg in a hole Egg capsicum gravy Egg Puff Egg Thokku Ingredients: 3 large eggs 1 large onion, finely chopped 1 green chilly finely chopped 1 sprig of curry leaves 1 tsp chopped coriander leaves(optional) 1/2 tsp black pepper powder salt to taste 1 tsp oil How to make egg burji: Heat a wok and add oil. Then add sliced onions, curry leaves and green chillies. Saute till onions turn translucent. Add salt. Add 3 eggs to it. Add salt. Give it a gentle stir occasionally on low-medium flame. Sprinkle some black pepper powder. Once the eggs are cooked thoroughly add chopped coriander leaves and switch off the flame. Tada! egg burji is ready.  

Egg in the basket

Egg in a hole or egg in the basket is nothing but fried egg cooked in the hole of a bread slice. I have to admit that this is my second attempt of making egg in a hole as my first try did not come out the way it should.  If you are from Chennai you would obviously hear this term "half boil" - and if you are a fan of half boil, then you would love this recipe for sure. Egg in the basket is a wholesome breakfast when served with a bowl of mixed fruits and a coffee - wow! This is my dream breakfast or brunch you would call it on a lazy sunday morning. All you need is a slice of bread or a waffle and one egg. You can season with salt, pepper and grated cheese which is totally optional. If serving for kids, do flip and cook.
