Vada Curry

Vada curry is one of the most popular side dish in Northern parts of Madras. People just make idlies/dosa or chapati at home and tend to buy vada curry from nearby hotels for their breakfast. It's so yummy. I live in the suburbs of chennai and vada curry is not prominent in the hotels there. Hence whenever i go the north madras i have this dish bought from the hotels. My mom also makes it at home often.  I tried it for last sunday's breakfast and it turned out amazing. Let me share the recipe for vada curry. Ingredients: 1 cup channa dhal/bengal gram 2 green chillies 1 tsp snauf 1 tbsp salt 2 tbsp oil 1 tbsp chopped corriander leaves 1 tsp chilli powder 1 tsp coriander powder a pinch of turmeric powder 1 bay leaf 3 cloves 2 cardamom 1-inch cinnamon stick 1 tsp stone flower 4-5 garlic pods Steps: 1. Grilled Salmon Fish

Atlantic salmon fish is one of those rich foods having omega 3 fatty acids. I often cook fish at home. It's either tilapia or salmon. The traditional way of making fish fry is in the tava using little oil, called shallow fry. My mom makes fish fry that way. I used the same masala for fish marination but instead of shallow fry on a pan, i grilled the fish in conventional oven for about 25 minutes. Usually fish gets cooked faster so we might just need to grill for 10 minutes in case of small pieces. I used the big pieces of salmon as such which required about 25 minutes to get cooked completely. Ingredients: 1 pound Atlantic salmon fish 1 tsp red chilli powder 1 tsp coriander powder 1/2 tsp turmeric powder 1 tsp garam masala powder 1 tbsp oil 2 tsp chopped coriander leaves or parsley leaves 1 tsp black pepper powder 2 tsp lemon juice salt to taste Steps: 1. Eggplant curry

Eggplant curry is made using peanuts and sesame seeds predominantly. The flavour of peanuts and the oily sesame seeds make the curry rich in texture and taste. Chappati and eggplant curry is personally my choice of food for dinner. Let's take a look at the ingredients. Ingredients: 1 medium sized eggplant or 5-6 brinjals slit vertically along with it's stem 1 carrot, optional 1 tbsp black pepper corns 2 tbsp peanuts 2 tbsp white sesame seeds 3 tbsp sesame oil Few curry leaves 3 green chillies, slit vertically 1 tbsp thick tamarind paste 1 tsp red chilli powder salt to taste Steps: 1. Dry roast the peanuts till light brown, Then add sesame seeds and roast till sesame seeds turn light brown. We need to add sesame seeds later as it turns out brown quickly as compared to the peanuts. 2. Let it cool completely.
