Aappam with coconut milk

Aapam is one of the varieties made out of rice batter. Ofcourse it varies from the typical dosa/uthappam by the way the batter is prepared. The consistency should be watery as compared to the idly batter. Let's look at the ingredients needed for making aappam. Ingredients: 1. 1.5 cups of rice, any rice not necessariy idly rice 2. 2 tbsp of grated coconut 3. ghee/oil for smearing aappam. 4. 1/2 tsp salt 5. 2 cups of water 6. sugar to taste 7. 2 cups of coconut milk Steps: 1. Soak the rice overnight or atleast for 8 hours. 2. Once it's soaked for the given period of time, wash it well with running cold water. 3. Add the soaked and washed rice to the mixer. To this add 2 tbsp of coconut and grind it well to a smooth mixture. 4. Now, to this add salt and 2 cups of water. The battery should be water and is ready to go into the a pan/kadai. 5. Idly batter

Idly is one of the staple food in south India especially TamilNadu.  Idly is a rice cake made out of fermented rice and black gram batter. I recently moved to California, its been almost 6 months now. In India, I have idly/dosa for my breakfast. After moving here, i either have corn flakes or bread sandwich. On few days i prepare sprouts for breakfast. Over the period of 6 months we got bored of these 3 breakfast dishes and we ended up skipping our breakfast altogether which is not healthy at all. Meanwhile, i have put my hands at making idly/dosa with the rice i get at local stores. And even with sona masoori rice, the idly batter doesn't turn out well. It's always a failure attempt for me. The lesson i learnt from all my mistakes is "Rice really does matter" for idly batter consistnecy and a good idly/dosa. Hence i ordered idly rice from  walmart  and it worked well. Since then onwards we are relishing on idly, dosa, egg dosa, aapam...

Chicken Stir Fry

Chicken stir fry is a way of marinating chicken with Indian masala for an hour or overnight depending on the time available for us. This dish can go well with roti  or biriyani. Let's take a quick look at the things we need. Ingredients: 1 pound chicken 1 tsp red chilli powder 1 tsp garam masala powder 1/2 tsp turmeric powder 2 tsp curd 1/2 tsp salt 1 tsp chopped coriander leaves Tempering: 2 tsp oil 1 tsp cumin seeds 1 tsp grated pepper corns Steps: 1. Clean the chicken very well by adding little turmeric powder. This helps reduce the raw smell of the chicken. 2. Add all the ingredients mentioned above except coriander leaves. Mix them well and set it aside for at least 15 minutes. The marination time may vary upto overnight depending on the time you have. 3.
