Raagi Adai

Finger millet or raagi is one of the high nutritious cereal. Raagi Adai is made out of raagi flour which is readily available in stores these days. There are two ways to make the raagi Adai. One is salty and the other one is sweet. Here we are going to see about the salt version of raagi Adai. Ingredients: 1 cup raagi flour 2 cup chopped onions 1.5 cups chopped spinach or any greens 2 green chillies, finely chopped 1 tsp salt 2 tbsp oil or ghee Steps: 1. In a large mixing bowl, put together all the ingredients and and start mixing well, so that the salt is evenly spread in the flour. The little bit of water from the onion and spinach itself will make the dough together. 2. Sprinkle some water 💦 and mix it together. Form a dough by adding little water. Eggplant fry

Eggplant is a type of brinjal commonly seen in US and other western countries. I like brinjal fry back in India but here we get a little large brinjal and eggplant but not the ones which is small and stout :) So i explored ways of cooking this eggplant in an interesting way and ended up with this spicy masala fry. Inspired by the fish fry masala we do every other day. Ingredients: 1 eggplant 1 tsp chilli powder 1/4 tsp turmeric powder 1/4 salt 1/2 tsp cumin powder 1/2 tsp garam masala 1 tsp dried oregano leaves or 1 tsp fresh chopped parsley leaves 2 tsp finely chopped coriander leaves 3 tbsp oil Steps: 1. Cut the eggplant into thin round slice, not too thin or too thick. If it's too thin it gets out of shape while cooking. In case of thick slices, it doesn't get cooked well. 2. Homemade Ghee

The place i live in, doesn't have stores which sell ghee. The aromatic ghee we get in India. So i tried my hands at making ghee yesterday. I just followed the way my mom makes ghee back in home. And it turned out well. The smell of the ghee just kills :). Though my mom uses moringa leaves towards the end of the ghee making process. Here i don't get moringa leaves either. Here is the ingredients list. Ingredients: 8 0z butter (approximately 225 gms) Steps: 1. Take a heavy bottomed pan, keep it on high flame. Add the butter sticks to it. 2. The butter starts melting soon. 3. Keep stirring at constant intervals. 4. Continue stirring. A white foam appears on top with small bubbles. 5. At the same time, the white bubble settles at the sides of the pan. With a spatula scrape the sides and mix it with the foaming butter. 6. Baking is an art I believe. When I started baking my very first cake there are few hiccups here and there in the process. But over time, I'm getting to learn the art by taking tips from experts and fellow bloggers. We will see a cupcake recipe. As chocolate is loved by most of us, we shall see the recipe for a chocolate cupcake, flavoured with coffee. Ripe plantain fry

There are times when we do not know what to do with ripe plantain laying at our kitchen shelf. Well, we can make a very quick 2 step recipe with it. It's a ripe plantain fry with a sugar coat. Ingredients: 1. 1 ripe plantain 2. 2 tsp ghee 3. 1 tsp sugar Steps: 1. Slice the plantain into small rounds. Heat a pan, add ghee to the pan. 2. Place the plantain slices in such a way, the plantain slices do not touch other slices. 3. Fry 2 minutes on each side on medium flame. 4. Coat each of the plantain slices with sugar crystals. Alternatively, you can add a little bit of salt if at all you like salty snack :)
