Naatu Kozhi Kuzhambu/ Country chicken Gravy

Country chicken gravy is kind of slow cooked in a pot or easily cooked using a pressure cooker for upto 5 whistles. A very nice blend of masala/indian spices are ground to a fine paste and added to the chicken pieces along with onion and tomatoes. It then takes up some more fine powders of red chilli and coriander seeds. I use rock salt here as it is very healthy when compared to the regular ones. We grew up in a community where the kulfi wala comes to our area on a regular basis during summer holidays.  Kids would jump and go to get kulfi. Just remembering those memories while sharing the recipe of home made Pineapple kulfi :) Ingredients: 3 cups of full fat milk 1 tsp cardamom powder or 2 cardamom pods 2 tbsp chopped or crushed almonds few saffron strands 2 tsp rice flour (optional) mixed with 2 tbsp of milk 1.5 cups of sugar 1 cup of pineapple chunks How to prepare pineapple kulfi: 1. Heat a heavy bottomed vessel with 3 cups of full fat milk. 2. Smoothies are well packed with energy fruits like berries and milk. It's definitely a mid morning drink or even can be your morning breakfast complement to energize you for the rest of your day. Today, we shall see the mixed berry smoothie using cold milk - you can use yogurt too instead of milk to get that thick texture. Ingredients: 1 cup of mixed berries -strawberries, blueberries, blackberries 2 tsps of cane sugar or honey 1.5 cups of full fat milk Whipped cream - optional Few Ice cubes - optional How to make berry smoothie: 1. Semiya payasam/Vermicelli kheer

Kheer or payasam is made using milk and semiya, sabudhana,rice or semolina. The variety is a plenty and in today's blog we are going to see the basic payasam which my mom makes at every single occasion in our home. It is a kid-friendly recipe and you can feed your one year toddler too with the health benefits from dry fruits and milk :) Ingredients: 1 cup of semiya/vermicelli 1 cup of sugar 2 cups of milk 1/4 cup of chironji seeds 1/2 cup of dry fruits - cashews,raisins and almonds 1/2 tsp cardamom powder/ 2 cardamom pods 2 tbsp ghee How to make semiya payasam: 1. Heat a non-stick pan and add a tbsp of ghee and roast the dry fruits like cashews, raisins and almonds along with chironji seeds. Transfer it to a plate or bowl and keep it aside.
